A refreshing little swerve off the the juice super-highway, we're supping on the West Coast cool-aid this time. Head brewer Rich cut his teeth brewing in California before returning home to Ireland, and he always relishes the opportunity to get stuck into these classic brews!
We've got our favourite Deluxe Irish Pale malt base here, using field-traceable barley grown in Dundalk, and some Cara Clair and Cara Malt for light caramel richness and a dab of malt sweetness. Fermented with the clean, neutral California Ale yeast strain to let the hops stand proud, we've got three classic West Coast varieties in the mix. Simcoe, Comet and Columbus... This trio play really nicely together, and give a lovely balance of crisp citrus, light fresh tropical and west coast piney, dank notes.
A little brighter and a little more bitter, this is a great reminder of why it's always so nice to revisit the classics now and again!
